This blackened shell cake is part culinary specialties from the Vienne. Made from goat cheese, the Cheesecake is a real delight even if its appearance may leave some perplexed... We reveal its recipe to you.

Ingredients

  • 250 g goat cheese
  • 150 g sugar
  • 50 g of potato starch
  • 5 eggs
  • 1 broken paste
  • Cognac

Recipe

Pour the goat cheese, sugar, salt, 5 egg yolks, starch and cognac into a salad bowl. Mix well.
Place the shortcrust pastry in a buttered pie dish 20 cm in diameter. Preheat your oven to 200° C. Bake the tart base for 10 minutes.

Beat the egg whites until stiff and gently add them to the salad bowl. Pour the mixture onto the tart base. Bake for 45 minutes, until the top rises and browns evenly.
Let cool before unmolding.
